Truthfully, “Sour Gummies” might become a series on here. Even the sourest candies on the market never make me pucker so it’s fun to make your own. Here I have layered rhubarb natural sourness into another vegan gummy, adding a kick of citric acid at the end. A really fast, fun and PINK treat to make to share. I kept these bite sized but you can make them bigger if you so crave. You can get heart shaped cutters here. I’ve made these aggressively sour to highlight the Rhubarb. You can make them less sour by lowering the citric acid its rolled in at the end. Make these for Valentines Day or as a Game Day contribution - with so many salty snacks on the table everyone will want a little sweet. We’re rooting for Taylor (Boyfriends Team) Obvi. GO CHIEFS!


Rhubarb Sour Gummies
Makes about 60 gummies
600g Rhubarb Juice
900g cane sugar
5g salt
20g agar agar powder
Juice of 1 Lemon
white sugar for rolling
citric acid
Method: Make rhubarb juice by cutting up one pound of rhubarb into 3 inch pieces. Place in medium pot and fill with enough water to cover and allow to float freely. Simmer over medium heat for 15-20 mins till rhubarb is softened. Use an immersion blender to blend fruit into water. Strain mixture through sieve to get a clear liquid.
Measure out the 600g Rhubarb Juice needed for the recipe. Add remaining ingredients and return to pot. Skim foam off top off liquid. Bring to a boil over medium heat and hold for 3 mins. Again, skim any foam off top off liquid. Pour into a quarter sheet tray, and move to fridge to chill for 2 hours or overnight.
Punch out hearts and dry out on a cooling rack till tacky for 1-2 hours. In a small bowl mix 1 cup sugar to 1 teaspoon citric acid . Roll and coat candies in sour sugar mix. Dry out another hour. Store in airtight container for 2 weeks.
Note: Use fresh or frozen rhubarb. Choose the most red stalks for your juice for the best color!
